Purslane

Purslane is a leafy vegetable that often grows wild, but is also grown commercially. The leaves are fleshy and succulent, with a light, fresh and slightly acidic flavor, making purslane a special addition to salads, soups and smoothies.

What makes purslane particularly nutritious is its high content of vitamins and minerals, including vitamin C, vitamin A, magnesium, potassium and iron. In addition, it contains omega-3 fatty acids, which is unusual for a vegetable and contributes to healthy cardiovascular function. Purslane also contains fiber that supports digestion and can help keep blood sugar levels stable.

Thanks to its mild, slightly sour taste and healthy properties, purslane is versatile in the kitchen: raw in salads, lightly blanched as a vegetable dish, or as a flavorful addition to soups and smoothies.

In short, purslane is a nutritious, versatile and flavorful vegetable that offers both healthy nutrition and culinary variety.
