White carrot
This white carrot is also called the primal carrot. The white carrot, along with the purple carrots, date far back into the past and were the first carrots we humans ate. It is a bit “heartier” compared to the sweet orange carrot. It is a winter carrot and is harvested mainly in the spring. The white winter carrot owes its color to high levels of lutein. On the contrary, unlike the orange carrot, the white carrot contains almost no beta-carotene. This is the pigment that gives the orange carrot its color. Carrots are a good source of fiber and fit perfectly into a healthy diet.
