White Beet
Many people are all too familiar with the beet. For those who have ever held it with their bare hands or dropped it on their clothes, they know that the red dye of the beet hardly goes away. This is also why red beet is often used as a dye for certain foods.
The white beet is a variation of the red beet and is many times sweeter. It is a true summer beet and colors much less violently than red beets. It does not have the two frequently mentioned disadvantages of the red beet (a bitter taste and persistent discoloration). That’s why we love using it in our dishes.
