Turnip greens

Turnip greens are also called leafy purslane. It is a so-called “forgotten vegetable”: a vegetable that used to be eaten frequently. Only over the years it has disappeared from our daily diet. And that’s a shame because turnip greens are full of good nutrients.

What substances are in it?

Turnip greens are relatively high in vitamins A, B11, C and K and the mineral iron. In addition, this fresh green leafy vegetable is a good source of fiber.

What does this mean for my health?

Turnip greens are high in vitamin C and iron. This is a very useful and good combination because vitamin C promotes iron absorption into your blood from plant sources. Among other things, iron is good for the formation of hemoglobin. This is a protein that is part of your red blood cells and contributes to normal oxygen transport in your body. Iron also supports your energy levels. In fact, it boosts your energy metabolism, as it helps release energy from fats, proteins and carbohydrates. Vitamin K is good for your bones. In fact, it plays a role in bone formation and helps keep your bones strong. Vitamin A supports your immune system and is good for your eyesight.

Why do we use turnip greens?

Turnip greens generally have a spicy flavor, which makes them a great seasoning in a variety of dishes. This forgotten vegetable is not only delicious in many recipes, it is also very healthy. Turnip greens contain many good nutrients! Of course, we could not leave this superfood out of our ingredient list!
