White carrot

This white carrot is also called the primal carrot. The white carrot, along with the purple carrots, date far back into the past and were the first carrots we humans ate. It is a bit “heartier” compared to the sweet orange carrot. It is a winter carrot and is harvested mainly in the spring. The white winter carrot owes its color to high levels of lutein. On the contrary, unlike the orange carrot, the white carrot contains almost no beta-carotene. This is the pigment that gives the orange carrot its color. Carrots are a good source of fiber and fit perfectly into a healthy diet.

Why do we use the yellow carrot?

The white carrot is a healthy addition to your dishes and juices. By combining this somewhat savory carrot with the orange and purple carrot you create a cheerful color combination on your plate. But of course it can also be used well in juices. We like to use the white carrot in our juices in combination with other vegetables with a light color!
