Yellow bell pepper

The bell bell pepper is related to the chili peppers, but lacks the “hot” flavor caused by the substance capasin. Peppers come in many shapes and colors, from pale yellow and light orange to dark green and even purplish black. Peppers are an excellent source of vitamin C, vitamin A and carotenoids; there are as many as thirty different carotenoids in peppers. Bell peppers also contain vitamins B6, B5 and B11, vitamin E, thiamin (B1) and vitamin K. The large number of different nutrients make bell peppers one of the healthiest vegetables in your vegetable pantry! One bell bell pepper contains over thirty phytonutrients including alpha-carotene, beta-carotene, lycopene, lutein, cryptoxanthin and zeaxanthin.
