Yellow carrot
This yellow carrot is also called the primal carrot. The yellow carrot, along with the purple carrot, dates back to a distant past, so these were the first carrots that we as humans started eating. The yellow carrot has a very mild taste and is a bit “heartier” compared to the sweet orange carrot. It is a winter carrot and is mainly harvested in the spring. The yellow winter carrot owes its color to high levels of the plant substance lutein. Carrots are a good source of fiber. Per 100 grams, they provide about 2.8 grams of fiber. So an ideal vegetable to incorporate into all your favorite dishes or juices.
