Lime Blossom

The linden tree was considered a sacred tree thousands of years ago. It was often placed in the center of a village. The “spirit” of the linden tree was seen as the protector for houses, wells and churches. Various trials, weddings or funerals would be held under the tree. Indeed, the tree was said to protect against evil influences because the goddess Freya had taken up residence in the tree. The linden tree is a beautiful tree to behold. The wide-growing tree has beautiful heart-shaped leaves that have a special blue-green color on the underside. In summer, the tree blooms with pale yellow flowers that give off a lovely sweet fragrance.

Usage of linden blossom

The leaves and blossoms of the linden tree are edible. The young leaves can be used raw in salads. Later in the season, the leaves are a bit tougher and it is better to cook them first.
