Sun-dried tomato

The sun-dried tomato is becoming increasingly popular. It is mostly produced in areas such as Italy, Spain and Tunisia where there are so-called “tomato drying farms. Here you find vast plains where millions of tomatoes lie shriveling under the scorching sun from June to October. After a week of sunbathing, about ninety percent of the original tomato has evaporated, which varies a bit by size. This intensely concentrates the flavor and also makes the tomato last longer.

The healthy substances

As in normal tomatoes, sun-dried tomatoes contain numerous healthy vitamins. If you were to eat about 100 grams of sun-dried tomatoes per day, you would get about 61% of the recommended amount of vitamin K, 52% of the recommended amount of vitamin C, 22% of the recommended amount of vitamin B6, 57% of the recommended amount of vitamin B3, 31% of the recommended amount of vitamin B2, and finally 23% of the recommended amount of folic acid. In addition, sun-dried tomatoes are rich in the minerals iron, potassium, manganese, phosphorus, copper, calcium and magnesium.
