Chioggia beet
Chioggia beet comes from the town of Chioggia, a port town in the province of Venice in Italy. It is a red beet variety that was discovered and introduced into the kitchen around 1840. It can be recognized by its red and white rings when you cut the beet, and when you cook it it turns pink. The taste of chioggia beet is mildly sweet, much sweeter than regular red beet.
