Purple carrot
Did you know that carrots have only been orange since the 18th century? That’s when Dutch people started growing them in their national color. A University of Texas researcher grew a purple carrot back in 1989. The color is due to the anthocyanins (pigments) contained in the purple carrot. By the way, the color difference does not drastically change the taste; the purple carrots are slightly sweeter than the orange ones.
